R\u00e2per finement le pain d\u2019\u00e9pice. Porter \u00e0 \u00e9bullition le lait et la cr\u00e8me avec le pain d\u2019\u00e9pice r\u00e2p\u00e9, le sucre et les \u00e9pices, puis ajouter le tout aux jaunes d\u2019oeuf en remuant. Remettre dans la casserole. Chauffer jusqu\u2019au seuil du point d\u2019\u00e9bullition sans cesser de remuer. Laisser refroidir.
