Partager les fruits en deux, puis les recouper en fines tranches. Les mettre dans une jatte. M\u00e9langer l\u2019eau, le punch au rhum, le miel et la cannelle, puis porter le tout \u00e0 \u00e9bullition. Verser sur les cl\u00e9mentines et laisser mac\u00e9rer 2 h.<\/p>\n\n\n\n<p>Faire caram\u00e9liser le sucre dans une casserole en inox. Retirer du feu, ajouter les noix et m\u00e9langer. Y verser la cr\u00e8me en remuant. R\u00e9partir sur du papier sulfuris\u00e9 et laisser refroidir.
